I have another yummy recipe to share with all of you!
Finding healthy snacks is one of my biggest struggles. I am always looking for new recipes to try! This particular recipe was originally found on another blog (http://www.malzisfit.com/chocolate-chip-banana-protein-muffins/) but I changed some of the ingredients to my liking! Feel free to play around with her version or mine to make it your own!
1 1/2 cups whole wheat flour
1 tsp baking soda
1 tsp salt
3 egg whites
1 cup sugar alternative
1/2 cup light brown sugar
3 tbsp smart balance soy free butter spread
2 ripe bananas mashed
4 scoops vanilla protein (I used Herbalife Vanilla PDM)
Preheat oven to 350 degrees
Mix all ingredients together
Use a small amount of coconut oil (or oil of choice) on muffin tins
Add mixture to a 12-cup muffin tin
Bake for approx 15 minutes
Let cool for 5 minutes
These are delicious AND filling. They will last you all week – perfect for on-the-go gals. Make sure to freeze the ones you aren’t going to eat within the next couple days. Enjoy!
